தேவையான பொருள்கள்:
முழு உளுந்து - 2 கப்
சீரகம் - 2 டீஸ்பூன்
மிளகு - 3 டேபிள்ஸ்பூன்
உப்பு - தேவையான அளவு
எண்ணெய்.
செய்முறை:
மிளகு, சீரகத்தை ஒன்றிரண்டாக உடைத்துக் கொள்ளவும்.
உளுந்தைக் நீரில் கழுவி, 15 அல்லது 20 நிமிடங்கள் மட்டும் ஊறவைக்கவும்.
தண்ணீர் சேர்க்காமல், சாதாரணமாக வடைக்கு அரைப்பதை விடவே அதிக நைசாக அரைத்துக் கொள்ளவும்.
அதில் உடைத்த மிளகு, சீரகம், உப்பு சேர்த்துப் பிசையவும்..
வாணலியில் எண்ணெயைச் சூடாக்கி, எண்ணை தடவிய இலை அல்லது ப்ளாஸ்டிக் பேப்பரில் தட்டையாகத் தட்டி, நடுவில் துளை இட்டு, காய்ந்துகொண்டிருக்கும் எண்ணெயில் நன்கு பொரித்தெடுக்கவும்.
அரைத்து அதிக நேரம் வைத்திருந்தால் நிறம் மாறிவிடும். உடனே செய்துவிட வேண்டும்.
சாப்பிட தட்டை மாதிரி கடினமாக இருக்கும். பலநாள்களுக்குக் கெடாது.

Thanjavur degree coffee
In tamilnadu, almost all the people are addicted to coffee(atleast twice a day).Thanjavur degrre coffee is a very famous slang in tamilnadu, like kumbakonam vethalai, kanjipuram silk etc....).Coffee poduradhu oru kalai thaan....!With very same cofee powder you can prepare a good coffee and also the worst.So, let me tell you how to make thanjaur degree coffee.
Ingredients:(for 1 person)
Milk
coffee powder( coffee powder that you get in any coffee shop in india)
sugar
Procedure/
1.First, take the coffee filter(traditional one) and fill the half of the upper desk( the one with the holes) with the coffee powder)
2.Heat the water to boiling point and pour the water inth the same cup( upper one in the filter)
and close it with the lid and leave it for 10 minutes and you get the the thick syrup in the lower portion of the filter.
3.Now, heat the milk to boiling point.
4.Now, take the tumbler, put one and half (or) 2 table spoons of sugar( according to theindividual's taste), then add the coffee syrup to the sugar(nalla melendhu oothanum,nalla bubbles varra madhiri)
5.Then, to this add milk( never add milk and sugar, and then the coffee syrup, thats ordinary coffee, that would not give the tanjore degrree coffee taste, i think)
6.once again, with the help of davara,coffee nalla innoru thadava mix pannittu kudikka vendiyadhu thaan°
( I got this recipe from a tanjore hotel, believe me)
Then, eppadi coffee kudikalam?
1.morning elundhonna, suda suda coffee ya kaila vachindu, left hand la hindu paper or dinamalaa vachindu, news padinchindae cofee kudikara sugame sugam.
2.Eveningla, suda suda coffee with the traditional noruks like karachev,mixer etc....
makes a wonderful combination.
3.After a long work schedule, if you take a cup of coffee, itgives you an energetic feeling(sometimes, it helps as an pain killer for headache( for some people)
4.Sileper veetla koffee kudicha, apram jenmathukkum coffee mela veruppu vandhudum.Beware!

Arisi upma
Arisi upma is a very common dish in tamilnadu.Usually , it involves a long process with vengalapanai and karandi.But, with pressure cooker, its very easy to prepare arisi upma.
Ingredients:(For 2-3 persons)
1 cup of rice
toor dhall - 1 table spoon
red chilli - 2 Or 3
pepper - 1 tea spoon
Asafoetida_ little
curry leaves
oil- 1 table spoon
coconut oil - 1 table spoon
urud dhaal- 1 tea spoon
mustard seeds- 1 tea spoon
salt to taste
Procedure:
1.grind coarsely rice,toordhall, red chilli, pepper in mixer grinder
2.take a stainless steel vessel on the stove .
3.then, take oil(including coconut oil° and put urud dhall, mustanrd seeds, curry leaves and assfoetida
4.after mustard seeds starts popping, take 2 cups of water( for 1 cup of rice) if it is basmati rice, otherwise take two and half cups of water in the vessel
5.after the water starts boiling,put the grounded powder in the vessel and stir it constantly
6.when the mixer reaches a semi solid state, keep the vessel inside the pressure
cooker and cook it for 2 whistles
7.gving some standy timeafter the whistle, open the pressure cooker and your arisi upma os ready.
thats all, ready to eat
Then, eppadi saapdalam( kaiyaala eduthu thaannu kadi joke solla maaten)
1.arisi upma with sugar is an excellent combo
2.arisi upma with any chutneys or sambhar is also good
3.some like it with dosa molagapodi also
4.the best thing about this upma is, niraya perukku idhu pudikadhu

vathakuzhambu
vathakuzhambu is a delicious gravy(like sambhar) in the southindian(tamilnadu) cuisine.
Ingredients:( for 4 people)
tamarind paste-1 tablespoon
sambarpowder = 2 and half tablespoons
onion chopped - 1 no
mustard seeds - 1 tea spOon
urud dhall - 1 tea spoon
gram dhall - 1 tea spoon
curry leaves
gingelly oil - 4 table spoons
rice flour - 1 table spoon
salt = according to taste
eppadi panradhunnu paapom:
1.first take a pan or stainless teel vessel and keep it on the stove(appadi mudhal step solliten)
2.then, pour th nalla ennai into the vessel and add urud dhall, gram dhall, mustard seeds,curry leavs in the order.
3.After the mustard seeds vedichifying,add the chopped onionand fry it slightly.
4.then, add the sambar powder andmix it.
5.Add 1 cup of water into the vessel,then tamarind paste,and salt.
6.heat the mixture for 15 minutes until nalla vasanai varum varai.
7.then,mix the rice flour in the water and add it to the mixture and add 1 more cup of water.
8.Heat the mixture for 5 minutes until it becomes slightly thick in consistency
Avolo thaan, vatha kuzhambu ready!!!
ippo eppadi vatha kuzhamba saapidalamnu paaklam:
1.plate la konjam suda suda sadham eduthundu, adhula nalla ennai oothi then vatha kulmabu mix panni, porihta ulundhu appalam or sutta arisi appalam vachi saapidalam.
2.OR, take curd rice in a plate with the vatha kulambu in a side cup.then, konjama konjama curd rice and vatha kuzhamboda saapidalam.
3.If the vathakuzhambu is too tasty, appadiyae soup madhiri kudikalam.
